On New Year's Eve, you might try the Norwegian Viking favorite, Mead, instead of champagne.
Buy it or make it yourself. Here's how:
Equipment: an empty 4 pint milk bottle, a balloon.
Ingredients: a 24-ounce jar of clear honey, half an orange, 15 raisins, cinnamon, nutmeg, allspice, warm water, dried yeast.
Pour two pints warm water into the fermentation chamber (milk bottle) and add honey. Put a lid on bottle and shake to dissolve honey. Cut half orange into small segments, add to fermention chamber. Add a pinch each of cinnamon, nutmeg and allspice, raisins and warm water to the fermentation chamber until it's about 3.5 pints full. Add dried active yeast. Replace cap, shake bottle to aerate
mix.
Prick 3 holes in the top of a large balloon. Uncap bottle, stretch neck of balloon over bottle mouth. (this lets CO2 out). Set bottle in a warm place, soon you will see the balloon inflate and foam. Store in a warm, dark place to ferment. (If the balloon comes off, replace it.) Over time the mead will become clearer and after 3 weeks you can siphon off a dark, golden, clear mead to enjoy
immediately, or store it in a demijohn to further mature.
